Ensalada de Calamaris

Eansalada-de-Calamaris INGREDIENTS TO PREP SQUID:


  • 1 Tsp Vegtable Oil or Olive Oil
  • 1/2 Tbsp White Vinegar
  • 1 Tbsp Finely Chopped Onion
  • 1/2 Tbsp Finely Chopped Scallions
  • 1 Tsp Abraham Rosa Seasoning
  • 4 Ripe Tomatoes Cut into Baskets
  • 4 Small Red Cabbage Leaves


CLEAN & PREP SQUID:  To clean Calamari (Squid) discard celluloid backbone, ink sac and head. Wash thoroughly to remove and sand particles. Boil Calamari in 1 1/2 cup water with 1 Tsp Abraham Rosa Seasoning for about 5 minutes (use only small calamari). Remove from stove, drain and allow to cool to room temperature.

PREPARE DISH: Cut calamari into 1/2 inch pieces. Stir in oil, white vinegar, chopped onion, scallions and 1 Tsp Abraham Rosa Seasoning. Mix well and refrigerate from approximately 1 hours. Fill tomatoe baskets with mixture. Place a single greel lettuc leaf on each plate. Center lettuce leaf with a small red cabbage leaf. Place stuffed tomatoe basket on top and garnish as desired. Eenjoy!
