Latin Roast Pork Recipe

Puerto-Rican-Roast-Pork-Recipe Servings: 10Ingredients:

1) A 6-8 Pound Pork Loin Roast

2) ¼ cup ABRAHAM ROSA SEASONINGS

Preparation:

  1. Take roast from the refrigerator and wipe it with a damp cloth and cut off any surplus edges and fat.
  2. Cut deep gashes into roast surfaces.
  3. Rub ABRAHAM ROSA SEASONINGS into gashes and over entire surface of meat.
  4. Return roast to refrigerator and allow it to “rest” for approximately two hours. (This is not absolutely necessary but it produces a true Caribbean flavor.)
  5. Place roast, fat side up, on a rack in a baking pan in over preheated to 325 degrees.
  6. Bake for 30-35 minutes per pound or until tender.
  7. During baking, baste roast occasionally with drippings.
  8. Serve roast with either baked sweet potatoes or stewed yellow rice.

*Rib or picnic cut may be used.
