Ensalada de Calamaris

Eansalada-de-Calamaris Ingredients:1) 2 pounds fresh cleaned squid2) 1 ½ cup water3) 1 teaspoon Abraham Rosa Seasonings

4) 1 teaspoon vegetable or olive oil

5) ½ tablespoon white vinegar

6) 1 tablespoon finely chopped onion

7) ½ tablespoon finely chopped scallions

8) 1 teaspoon Abraham Rosa Seasonings

9) 4 ripe tomatoes cut into baskets

10) 4 small red cabbage leaves


  1. To clean calamari (squid), discard celluloid backbone, ink sac and head.
  2. Wash thoroughly to remove any sand particles.
  3. Boil calamari in 1 ½ cup water with 1 teaspoon Abraham Rosa Seasonings for about 5 minutes. (Use only small calamari).
  4. Remove from stove, drain and allow it to cool to room temperature.
  5. Cut calamari into ½ inch pieces.
  6. Stir in oil, white vinegar, chopped onion, scallions, and 1 teaspoon Abraham Rosa Seasonings.
  7. Mix well and place in refrigerator for approximately one hour.
  8. Fill tomato baskets with mixture.
  9. Place a single green lettuce leaf on each plate.
  10. Center lettuce leaf with a small red cabbage leaf.Place basket on cabbage leaf.

Garnish as desired.
