PREPARATION:

Combine oil, vinegar and Abraham Rosa Seasonings in a jar or bottle with a tight fitting lid. Cover and shake vigorously for about 2 minutes. Serve over your favorite salads.

Latin Roast Pork

All purpose Abraham Rosa Seasoning is perfect for all types of recipes, from main dishes to party plates! Now you can “Awaken Your Inner Gourmet Passion!” with these simple and tasty recipes from Abraham Rosa.

Puerto-Rican-Roast-Pork-Recipe INGREDIENTS:

* Rib or Picnic cut may also be used.

PREPARATION:

Wipe roast with a damp cloth and cut off any surplus edges and fat. Cut deep gashes into roast surfaces. Rub Abraham Rosa Seasonings into gashes and over emtire surface of meat. Place roast into refreigerator and allow it to “rest” for approximately 2 hours. NOTE: This is not absolutely necessary but it produces a more true Caribbean flavor.  Preheat oven to 350 degrees. Place roast, fat side up, on a rack in a baking pan and bake for 30-35 minutes per pound or until tender.  During baking baste roaste occasionally with drippings. Serve roast with either baked sweet potatoes or stewed yellow rice.

Mayaguez Mango Salsa

Mango-Salsa-recipe INGREDIENTS:___

  • 2 Mangoe’s (medium) cut into 1/2 inch cubes
  • 2 Granny Smith Apples cut into 1/2 inch cubes
  • 2 Stemmed, seeded and chopped Jalapeno Peppers
  • 1/3 to 1/2 Cup Finely Chopped Cilantro Leaves
  • 3 Tbsp Fresh Squeezed Lime Juice
  • 3 Tbsp Fresh Squeezed Orange Juice
  • 1 Small Red Bell Pepper (diced)
  • 1 Small Yellow Bell Pepper (diced)
  • 1 Small Red Onion (diced)
  • 1 Tsp Abraham Rosa Seasoning

PREPARATION:

Place all ingredients in a mixing bowl. Gently fold together until evenly mixed. Refrigerate, covered for up to 3 days. Enjoy!

Ensalada de Calamaris

Eansalada-de-Calamaris INGREDIENTS TO PREP SQUID:

INGREDIENTS:

  • 1 Tsp Vegtable Oil or Olive Oil
  • 1/2 Tbsp White Vinegar
  • 1 Tbsp Finely Chopped Onion
  • 1/2 Tbsp Finely Chopped Scallions
  • 1 Tsp Abraham Rosa Seasoning
  • 4 Ripe Tomatoes Cut into Baskets
  • 4 Small Red Cabbage Leaves

PREPARATION:

CLEAN & PREP SQUID:  To clean Calamari (Squid) discard celluloid backbone, ink sac and head. Wash thoroughly to remove and sand particles. Boil Calamari in 1 1/2 cup water with 1 Tsp Abraham Rosa Seasoning for about 5 minutes (use only small calamari). Remove from stove, drain and allow to cool to room temperature.

PREPARE DISH: Cut calamari into 1/2 inch pieces. Stir in oil, white vinegar, chopped onion, scallions and 1 Tsp Abraham Rosa Seasoning. Mix well and refrigerate from approximately 1 hours. Fill tomatoe baskets with mixture. Place a single greel lettuc leaf on each plate. Center lettuce leaf with a small red cabbage leaf. Place stuffed tomatoe basket on top and garnish as desired. Eenjoy!
