PREPARATION:
Wipe roast with a damp cloth and cut off any surplus edges and fat. Cut deep gashes into roast surfaces. Rub Abraham Rosa Seasonings into gashes and over emtire surface of meat. Place roast into refreigerator and allow it to “rest” for approximately 2 hours. NOTE: This is not absolutely necessary but it produces a more true Caribbean flavor. Preheat oven to 350 degrees. Place roast, fat side up, on a rack in a baking pan and bake for 30-35 minutes per pound or until tender. During baking baste roaste occasionally with drippings. Serve roast with either baked sweet potatoes or stewed yellow rice.

CLEAN & PREP SQUID: To clean Calamari (Squid) discard celluloid backbone, ink sac and head. Wash thoroughly to remove and sand particles. Boil Calamari in 1 1/2 cup water with 1 Tsp Abraham Rosa Seasoning for about 5 minutes (use only small calamari). Remove from stove, drain and allow to cool to room temperature.
PREPARE DISH: Cut calamari into 1/2 inch pieces. Stir in oil, white vinegar, chopped onion, scallions and 1 Tsp Abraham Rosa Seasoning. Mix well and refrigerate from approximately 1 hours. Fill tomatoe baskets with mixture. Place a single greel lettuc leaf on each plate. Center lettuce leaf with a small red cabbage leaf. Place stuffed tomatoe basket on top and garnish as desired. Eenjoy!
