Latin Roast Pork

Puerto-Rican-Roast-Pork-Recipe INGREDIENTS:

* Rib or Picnic cut may also be used.


Wipe roast with a damp cloth and cut off any surplus edges and fat. Cut deep gashes into roast surfaces. Rub Abraham Rosa Seasonings into gashes and over emtire surface of meat. Place roast into refreigerator and allow it to “rest” for approximately 2 hours. NOTE: This is not absolutely necessary but it produces a more true Caribbean flavor.  Preheat oven to 350 degrees. Place roast, fat side up, on a rack in a baking pan and bake for 30-35 minutes per pound or until tender.  During baking baste roaste occasionally with drippings. Serve roast with either baked sweet potatoes or stewed yellow rice.

Caribbean Chicken Pasta

All purpose Abraham Rosa Seasoning is so versatile that it is even perfect for drinks! Now you can spice up a perfect Bloody Mary Cocktail with Abraham Rosa Seasonings … and “Awaken Your Inner Gourmet Passion!”

Caribbean-Chicken-Pasta-Recipe GARLIC BUTTER INGREDIENTS:

  • 1 Lb Unsalted Butter
  • 1 oz Fresh Thyme
  • 1/2 Tsp Red Pepper Flakes
  • 1/4 Cup Pureed Garlic
  • 1 Tbsp Abraham Rosa Seasoning


  • 8 oz Chicken Breast
  • 1 Cup Light Olive Oil
  • 1 Tbsp Abraham Rosa Seasoning


  • 2 1/2 Tbsp of Garlic Butter
  • 8 oz Chicken Breast, Marinated and Fully Cooked (grilled)
  • 1/4 Cup Quartered Mushrooms
  • 1/4 Cup Asparagus cut into small pieces
  • 1/4 Cup Diced Bell Peppers (Red, Yellow & Green mix)
  • 2 Tbsp fresh Lemon Juice
  • 1 1/2 Cups Heavy (whipping) Cream
  • 11 oz Cooked Penne Pasta (or your choice of pasta)
  • 2 1/2 oz Parmesan Cheese
  • 1/2 Tbsp of Abraham Rosa Seasoning


HOME MADE GARLIC BUTTER:  Melt butter in pan and blend all ingredients. Refrigerate and always have Garlic Butter on hand for this and other recipes.

GRILLED CARIBBEAN CHICKEN: Rub Abraham Rosa Seasoning on chicken breast. Put into a container and pour in olive oil. Marinate for at least 2 hours (for best results let marinate overnight).  Grill chicken and set aside for use in Carribean Pasta Chicken.

CARIBBEAN PASTA CHICKEN: Heat skillet to start. Add home made garlic butter, sliced grilled chicken, mushrooms and asparagus. Cook until nicely sauteed, then hit it with the lemon juice after 12 seconds. Add cream and heat up. Add the heated pre-cooked pasta if your choice. Heat all ingredients thoroughly.
